Avocado toast is a super genius, super easy recipe. I don’t know who’s brainchild this deliciousness was but it’s all the rage. You see so many variations all over the internet. I love topping mine with everything from fresh vegetables to cheese to fruit. I adore avocado toast for a healthy breakfast, lunch or even as an afternoon snack!

Here I topped toasted sprouted grain bread with smashed avocado then a fried egg and a dollop of chunky salsa. The creamy avocado with the crisp toast is pure perfection. The perfectly cooked egg and salsa add a ton of flavor. It’s a satisfying, bite after bite.

I love slicing into this toast and seeing the gorgeousness of that egg yolk as it makes its emergence onto my plate. Not a fan of runny eggs? Feel free to cook yours longer or even scramble an egg to put on top! Looking to spice things up a bit? A drizzle of sriracha is one of my favorite additions to this avocado toast recipe. This is such an easy recipe that makes a healthy choice no matter when you choose to enjoy it.

Avocado Toast with Fried Egg & Salsa

10 minutes

Yield: 1 serving

Avocado Toast with Fried Egg & Salsa

Sprouted grain bread topped with smashed avocado, a fried egg and chunky salsa for a healthy breakfast, lunch or afternoon snack!


  • 1 slice of bread (I used a sprouted grain bread), toasted
  • 1/2 an avocado
  • 1/2 teaspoon olive oil
  • 1 egg
  • 3 tablespoons chunky salsa
  • freshly ground black pepper
  • sea salt


  1. In a small bowl, mash avocado to desired consistency. Season with black pepper and sea salt. Spread avocado onto toast.
  2. In a small skillet, warm olive oil over medium heat. Crack egg into heated pan and cook until desired doneness.
  3. Top avocado with egg and salsa. Top with more black pepper, if desired.

Thank you so much Barb! I’m late to the avocado toast bandwagon but this one it hearty, flavorful and in constant rotation at my house these days.
