Arugula Pear Quesadillas

Arugula Pear Quesadillas -

Recently I was having lunch out with a friend and as I perused the menu, I knew I wanted something light but I didn’t want it to be lacking in flavor either. I found myself eyeballing the salad portion of the menu, which quite honestly is a rarity for me. I chose an arugula pear salad with candied walnuts. Well, mission accomplished! That salad was exactly what I was looking for and the flavors were amazing.

Arugula Pear Quesadillas -

Shortly after, I was making quesadillas for the girls for lunch. Just simple flour tortillas filled with cheddar cheese and chicken. Nothing fancy but they love them and it makes for an easy lunch. For my lunchtime quesadillas I decided I was going to channel that crazy good salad. Brie is one of my favorite cheeses, most often found when I’m making my Baked Brie Bites. So naturally, my tortillas were filled with creamy brie which I knew would melt just perfectly.

Because I love argula together with fruit and cheese, (just check out my favorite grilled cheese of all time, Peach Arugula Grilled Cheese) that melty brie was then topped off tender pears, peppery arugula and just a drizzle of honey. The end result? One of the best quesadillas I’ve ever eaten! This is an easy recipe that takes mere minutes to prepare yet you find this exquisite meal at the end. These Arugula Pear Quesadillas make the perfect light lunch or also would make an easy appetizer recipe!

Arugula Pear Quesadillas

Prep Time: 5 minutes

Cook Time: 6 minutes

11 minutes

Yield: 2 servings

Quesadillas with creamy brie, tender pears, peppery arugula and a drizzle of honey.


  • 2 flour tortillas (I used 8-inch)
  • 6-8 slices of brie
  • 1 pear, cored and sliced into 8 slices
  • 1 cup arugula
  • 1 tablespoon honey


  1. Place a large skillet on the stove over medium heat and spray with nonstick cooking spray.
  2. Lay the tortillas on a flat work surface. Lay 3-4 slices of brie on one side of a tortilla.
  3. Top with 4 slices of pear. Drizzle with 1/2 tablespoon honey and then top with 1/2 cup arugula.
  4. Fold the tortilla and carefully transfer to hot skillet. Cook 3-4 minutes then flip and continue cooking 2-3 minutes more until brie has melted and the tortilla is golden brown on each side. Cut into triangles and enjoy!
  5. Repeat with remaining ingredients.

Love this as a salad so making them into quesadillas is brilliant!
