Brioche is one of my favorite types of bread. Such simplicity but I love the rich, tender crumb of brioche. Golden, flaky outside while beautifully soft inside. It’s a joy to eat on its own with a pat of butter or smear of jam. Brioche is bread that needs nothing more. I also love it because it can also be turned into SO much more! It’s by far my favorite bread for making thick, eggy slices of cinnamon French toast.

With its slight buttery sweetness, brioche is also wonderful as a dessert. Bread pudding is spectacular with brioche or how about baking brioche cake style topped with a glaze or fruit? That was the inspiration behind this lovely Almond Poached Pear Brioche Cake with Red Wine Caramel. I really cannot emphasize enough the wonder of this brioche cake recipe. Tender, buttery brioche topped with red wine spice poached pears. A scattering of crunchy almonds complement the sweetness of the tender pears nicely.

I have been drizzling it on everything but after this cake came and went, my favorite way to enjoy it has been simply drizzled over vanilla bean ice cream. It’s incredible. I want to savor every last drop of it.

Almond Poached Pear Brioche Cake with Red Wine Caramel

Yield: 10 servings

Almond Poached Pear Brioche Cake with Red Wine Caramel

Buttery brioche topped with wine spice poached pears and the most decadent red wine caramel sauce!


    For Brioche:
  • 2 1/4 cups bread flour
  • 1/4 cup granulated sugar
  • 2 1/4 teaspoons (1 packet) Red Star Platinum Yeast
  • 1 1/2 teaspoons salt
  • 9 tablespoons cold unsalted butter, cubed
  • 3 eggs
  • 1/4 cup milk
  • For Red Wine Caramel:
  • 2 cups Cabernet Sauvignon or Merlot
  • 1 cup granulated sugar
  • 1 teaspoon cinnamon
  • dash of cloves
  • Other Ingredients:
  • 3 ripe red anjou pears, peeled, cored and sliced into 8 slices each
  • 1/4 cup sliced almonds


  1. In a large bowl, whisk together flour, sugar, yeast and salt. Add dry ingredients and butter to a food processor. Pulse until dough becomes sandy with pea-size pieces of butter. Add eggs, one at a time, pulsing to incorporate after each addition. Add milk with last egg and pulse until dough forms and everything is evenly combined.
  2. Prepare a 10-inch springform pan by lightly spraying with a baking spray containing flour. Place a parchment circle on the bottom of the prepared pan. Scrape dough into prepared pan. Spray hands with baking spray as dough will be very sticky. Gently press into the bottom. Cover with plastic wrap and allow it to rise at warm room temperature for 2 hours until puffy but no necessarily doubled in size.
  3. While dough rises, whisk together wine, sugar, cinnamon and cloves in a medium sauce pan. Place pan over medium-high heat and bring to a boil, whisking until sugar has dissolved. Add pears, reduce to a simmer and cook until pears just until fork tender, 6-8 minutes. Remove pears with a slotted spoon. Set aside to cool.
  4. Return wine mixture to a low boil and reduce until very thick and syrupy. Remove from heat and set aside for serving.
  5. Preheat oven to 375 degrees. Top risen brioche with cooled poached pears and sprinkle edge with sliced almonds.
  6. Bake in preheated oven 45-55 minutes until dark, golden brown. Remove from oven. Remove sides from pan and cool on a wire rack. Slice into wedges and serve drizzled with red wine caramel.

This is simply stunning Kate and every single time I see pears that have been poached I wonder why I don’t do them more often. In WINE? Oh yeah.

Thank you Barb! Poached pears are a favorite simple dessert in our house. Perching them on top of a cake seemed like a nice way to enjoy them. But that red wine caramel, that’s the star of the show. I’m loving that on everything these days!
