For me, life is all about the simplest of pleasures like the arrival of spring and the emergence of the first flowers that will soon grace our yard, watching my girls play together, Maddy making Molly laugh or Murphy wrestling a toy. Spring has yet to actually spring here in New Jersey despite the calendar’s insistence that it is indeed the season. This cake reminds me of spring.

There are certain desserts in life that are simple, only 1 or 2 flavors involved. They’re not complex or fancy. They’re un-messed-around-with and they’re perfect in their simplicity all on their own with nothing more needed. This simple 7Up cake definitely falls into that category. A classic pound cake whose only embellishment is a hint of lemon and a dusting of powdered sugar. Nothing more needed.
