
I’ve always been a huge fan of interesting flavor combinations, something you might not immediately think would go together. Herbs in desserts are sometimes a surprising little flavor hit like those Honey Roasted Peaches with Thyme. Or in the case of these Sriracha Fudge Popsicles, the unexpected warmth of something spicy in your sweets. Perhaps that sounds a little strange but trust me, it’s a flavor experience you want to have. Last summer I got to play around with the idea of fire on ice when I made Mango Habanero Popsicles. Sweet mango paired with the mild heat of Habanero, when frozen it’s the perfect balance of hot and cold without burning your tongue off.
Spicy peppers also get along fabulously with chocolate. Molé anyone? Or how about Double Chocolate Cayenne Cookies? Dark chocolate, with the warmth of cinnamon and a touch of cayenne. Peppers definitely work in desserts and with the sriracha craze going around I really wanted to make a sweet treat with it. Sure, I love sriracha on eggs, in bbq sauce, in mayonnaise… this chile sauce has countless tasty uses. But I kept going back to the thought of pairing it in something sweet.
That’s when Sriracha Fudge Popsicles were born. The classic fudge popsicle you know and love definitely likes its spicy new taste. These pops start out chocolatey, creamy and cool. As it melts in your mouth you detect a little sweet heat and the bite finishes off cool once more. Do you like your spicy foods to make a little more of an impact on your taste buds? Simply add a little more sriracha to your batch. The spice level is easily adjusted to make the perfect fudgesicle recipe for anyones taste.

Smooth, creamy chocolate fudge popsicles with a little heat thanks to the addition of sriracha for a spicy sweet treat.
Ingredients
- 2 tablespoons semisweet chocolate chips or chopped semisweet chocolate
- 1/3 cup sugar
- 1 tablespoon cornstarch
- 1 1/2 tablespoons unsweetened cocoa powder
- 1 1/4 cups whole milk
- Pinch of salt
- 1 teaspoon sriracha
- 1/2 teaspoon vanilla extract
- 1/2 tablespoon unsalted butter
Instructions
- Place the chocolate into a medium sauce pan over very low heat. Stirring constantly, melt the chocolate until smooth.
- Stir in sugar, cornstarch, cocoa powder, milk, salt and sriracha. Increase heat to medium. Stirring frequently, cook mixture until it thickens, about 5-10 minutes.
- Remove from heat, add vanilla and butter and stir until combined. Set aside to cool slightly then pour into popsicle molds. Freeze 30 minutes, then insert popsicle sticks. Return popsicles to freezer until frozen solid.
- **Or if you own a Zoku Quick Pop Maker, follow manufacturers instructions and be eating these sriracha popsicles in mere minutes!

I totally get this! I am all about these flavors. Heat and sweet work together well.

I love adding a little chili powder to anything chocolate. The spice is such a nice complement to the chocolate. I bet sriracha is delicious with chocolate too! 🙂

My husband hates chilli with his chocolate, but I think it’s a gorgeous taste combination! I can imagine how good this popsicles must be (so many popsicle recipes in the blogosphere right now! We did the Warrior Dash last week – soooo fun! Can’t wait for Tough Mudder to come to Washington (although I’m a little scared of the Electroshock therapy!)
Oh I want to do Warrior Dash! And I’m doing Tough Mudder in October (YIKES!!!) Very very nervous about the electroshock as well as the artic enema. But as nervous as I am, I’m equally excited. Tough Mudder will truly push me to the limits and I cannot wait to see what I can accomplish. You should come to New Jersey and do the Tri-State in October with me!

We are Sriracha addicts in our home, so I can’t want to give this a try! And I’ve been looking for a recipe that would inspire me to put my Zoku in use.

Love this recipe! The only problem is that I have no idea how to get my hands on sriracha sauce here in the Netherlands! 🙁 could I just substitute with fresh chili’s? Or any other tips?

I’ll add the link below. OR I would add a few dashes of ground cayenne pepper to the chocolate. That would go nicely! Chocolate and cayenne love each other. Good luck!
