When it comes to breakfast, I always start my day off strong and healthy. If I’m able to start my day off healthy yet somehow feel like I’m indulging, that’s just a bonus. Earlier in the year I tossed together cinnamon-kissed caramelized apples and protein packed quinoa when I made Apple Pie Quinoa. That apple pie quinoa makes a hearty breakfast or the perfect fix when your sweet tooth comes knocking. Soooo, here we are in the middle of pumpkin season. How could I not make Pumpkin Pie Quinoa?

I was recently reading an interview with C&J Nutrition, one of my favorite sources for nutrition information as well as healthy recipes. At the end of the article they suggested mixing together quinoa with blueberries and pumpkin seeds. How good does that sound?? The thought of quinoa with pumpkin seeds got me thinking about really amping up the pumpkin factor and viola, this Pumpkin Pie Quinoa was born! Fluffy, protein-rich quinoa with pumpkin puree, cinnamon, nutmeg and just a touch of brown sugar. Just like Apple Pie Quinoa, this pie-inspired quinoa recipe will start your day off the right way or with all the elements of a lovely slice of pumpkin pie, it’s the perfect little sweet treat in the afternoon.

Pumpkin Pie Quinoa

Yield: 1 serving

Pumpkin Pie Quinoa

Fluffy quinoa filled with all the flavors of pumpkin pie.

Ingredients

  • 1 cup cooked quinoa
  • 1/4 cup fat-free milk
  • 1/3 cup pumpkin puree
  • 1 teaspoon brown sugar
  • 1/2 teaspoon pumpkin pie spice

Instructions

  1. In a small saucepan over low heat, warm quinoa and milk. Stir in pumpkin puree, brown sugar and pumpkin pie spice. Serve warm.
