Some things in life are just too good not to try. Cookie dough cupcakes aren’t a new concept. I didn’t make this up, although I really wish I had! I’m one of those people who love eating raw cookie dough as I go along baking up real cookies. So the idea of hiding a little nugget of raw cookie dough inside a fluffy vanilla cupcake was definitely a little treasure that needed to happen in my kitchen.

The vanilla cupcake is perfect because it let’s the cookie dough flavor really shine through. I topped mine with a little chocolate chip cookie but I think a scattering of mini chocolate chips would be adorable too. Ooo! Maybe both? I like where this is going. Either way, if you’re a lover of cookie dough ice cream, raw cookie dough eating Β and the like then these cupcakes are right up your alley.

These cookie dough cupcakes are easy to make and will disappear quickly. A ravenous group of paramedics descended upon these cupcakes and within mere minutes after their arrival at my work, they were gone. Just. Like. That.
