I love roasting coconut and making my Coconut Honey Roasted Pineapple with Yogurt & Pistachios. Tropical, tasty and the perfect combination of sweet with the cool yogurt and crunchy pistachios. But then I give it a little sprinkle of chile powder to finish it off and it’s perfection.

A sweet, spicy pineapple martini perfect for summer sipping.
- 4 ounces vodka (for a spicier kick use jalapeño vodka, such as Stolichnaya Hot Jalapeño
- 3 ounce Monin Chipotle Pineapple Syrup
- 2 ounce pineapple juice
- 1 ounce simple syrup
- 4 mint leaves
- 1 tablespoon lemon juice
- dash of chipotle chile powder, if desired for garnish
- Fill a shaker cup halfway with ice and all ingredients. Shake vigorously. Pour between two martini glasses. Garnish with chipotle chile powder, if desired.
