In my humble opinion, there’s nothing better than the simple sweetness of fresh fruit. Yes, I’m a gal who (obviously) appreciates decadent desserts but I certainly don’t eat like that every day and often times, the things I’m making are given to other people. So when I’m looking for a healthy snack to take a break from all those sweets, you’ll find various fruits in my fridge. Then those fruits are destined to come together in salad form because variety is the spice of life, right?

This is my new “go to” fruit salad. I’ve made it several times already and I’m sure it is going to become a summer staple for me. Of course, this salad is a winner just judging by the plethora of fresh fruits. Peaches, cherries, blueberries, raspberries and strawberries… oh my! But the very best part about this salad is that it is tossed with some balsamic vinegar and a little fresh mint. You know about my love of all things balsamic. Even people who didn’t particularly care for balsamic vinegar loved this salad. When combined, the vinegar really brings out the sweetness of the fruit.

I recently found this amazing site, Devo Olive Oil Co. If you love gourmet olive oil and vinegar, this is the place for you! I had to reel myself in because I could buy one of everything. They have a gigantic shop filled with infused olive oils such as chipotle, basil, blood orange, wild mushroom and sage, and a ton more! Then my favorite part, the vinegar. They make white balsamic and aged balsamic of all varieties,  such as serrano-honey, chocolate, cinnamon pear, even coffee. The selection is gigantic! I want to tell you about it all because it’s just that awesome. They also sell pastas, teas and salts.

For this salad, I used the Strawberry Balsamic Vinegar as the dressing. It was the perfect pairing!  This vinegar was so fragrant and tasty that honestly, you could sip it. It’s that good.

Balsamic Fruit Salad

15 minutes

Yield: about 8 cups

Balsamic Fruit Salad

Mixed berries, peaches and cherries paired with fresh mint tossed with balsamic vinegar which really brings out the sweetness of the fruits for a unique and wonderfully delicious fruit salad.

Ingredients

  • 1 cup blueberries
  • 1 cup raspberries
  • 2 cups strawberries, hulled and chopped
  • 2 cups cherries, pitted and halved
  • 3 peaches, pitted and sliced
  • 1/4 cup fresh mint, chopped
  • 1/4 cup Devo Strawberry Balsamic Vinegar or other high-quality aged balsamic vinegar

Instructions

  1. In a large bowl, combine all the fruits and mint. Gently toss with the balsamic vinegar.

Beautiful fresh fruit plus balsamic vinegar is not only a classic, but it beats out a lot of those decadent desserts purely on simplicity and fresh ingredients. Plus, you can eat as much of you want of it! Speaking of..wait until I get to the my ‘freshman 15’ period in my story lol As for the giveaway, I follow you everywhere I social network – Twitter, Google + , Stumble Upon.
