Clearly, there is something about the Secret Recipe Club that makes me want to put bacon into caramel. When I was making this it hadn’t even occurred to me that last month I played with bacon and caramel as well! Oh well, there’s just something about that salty sweet combination that I cannot get over. It’s become my latest addiction. Now, I know not everyone will agree but for those hardcore bacon lovers out there I know that you’re with me on this one.

This month I was matched with the blog A Cook’s Quest. For the life of me, I cannot find the author’s name anywhere on her lovely blog. What I can tell you is that she is a woman who wears many hats. In her own words, she says she is “a mom, wife, chauffeur, daughter, sister, aunt, employee, student, counselor, couponer, referee, lover of wine and good food, and, of course, the cook.” And boy oh boy, can she cook! There were so many delectable dishes to choose from (had my mind not been clouded by bacon.)

I love the sound of these German pancakes. They sound so light and the addition of the berries and whipped cream sound like just the right touch. How about Balsamic and Onion Pot Roast? Yes please! And if it weren’t for Maddy’s peanut allergy I would have been all over this Peanut Butter Chocolate Cake Cheesecake. Holy cow!!

But alas, I loved the idea of making a caramel sauce that I infused with porky goodness and then drizzled over a brownie with a scoop of vanilla ice cream on top. Although The Cook preferred to use a wet method to make her caramel sauce which utilizes a candy thermometer and water. I personally just prefer the dry method of just melting the sugar with nothing else. The end result is the same and that result is that this caramel sauce was beyond good! Sweet, smoky and just a little salty also. Perfection. Unfortunately, the whole ice cream picture didn’t happen. It was a hot mess! Terrible and definitely not blog worthy at all. Not even close. But this caramel sauce takes plain vanilla ice cream to a superb level.

One Year Ago: Lemon Creme Brulee 

Bacon Caramel Sauce ~ Secret Recipe Club

35 minutes

Yield: 2 cups

Bacon Caramel Sauce ~ Secret Recipe Club

Smooth, thick caramel sauce infused with bacon flavor

Ingredients

  • 3 slices of bacon
  • 1/2 cup heavy cream
  • 1 cup sugar
  • 5 tablespoons unsalted butter

Instructions

  1. In a large skillet, fry the bacon until very crispy. Drain on paper towels and set aside.
  2. Add the cream to the pan and let stand for 30 minutes.
  3. At this point, you can very finely chop the bacon to add to the caramel if you are a hardcore bacon lover. If you would just like a smoky essence of bacon, don't utilize the fried bacon and reserve for another use.
  4. In a large heavy bottom pan, heat the sugar until it melts and become a deep amber color, swirling occasionally to ensure even cooking. Watch carefully, it can burn fast!
  5. Add the bacon-infused cream and butter and stir until the butter is melted. The caramel will bubble up dramatically at first and then subside. Be careful!
  6. If you've decided to use the bacon, stir the bacon bits into your caramel sauce now. The sauce will thicken as it cools.
  7. Enjoy!

I nearly died (again) when I saw this bacon caramel! Just GIMME a spoon and look away! I love the photos..especially because I can never get photos of anything in jars with Lowel Ego Lights…major glare, so I enjoy those who have naturally lit photos of stuff in jars..lol

Kate, this looks FABULOUS. I have not quite jumped on the bacon in sweets bandwagon, but I can’t lie, this flavor combination intrigues me and your sauce looks amazing! This might be my first try of bacon vs. sweet!

Made this tonight and it was delicious! The only problem was that it got hard and turned to a solid once it was poured on top of ice cream. That was a bummer!

Whoa, I’m so sorry to hear this Kristen. There’s no way it should turn back to a solid. I have no idea how that happened to you. I’ve made caramel sauce countless times (this particular one included) and never encountered that. That really is a bummer! Now you’ve got the science minded baker in me thinking about why this may have happened. 🙁

Sure Erica! This can be stored in the refrigerator for up to a month. You’ll just need to gently reheat it in the microwave at 50% power or over low heat on the stove.
